Uses for ají amarillo? Bought a jar of ají amarillo paste (?) for lomo saltado. It came out amazing, but what else can I use it for? I’m mostly used to Mediterranean style dishes so this is a little out of my comfort zone. Heavily used in Peruvian cooking. Look for a book called Peru by Gaston Acurio. TONS of recipes.
